Celebrating Easter

For Christians, Easter is the most glorious day of all as we celebrate the resurrection of Jesus Christ. It is also a special time for families to gather for a meal and maybe an Easter-egg hunt with the kids. While most tables will be filled with traditional ham, potato salad, deviled eggs, etc. hopefully the following recipes will help put the finishing touches to your buffet. It is my hope and prayer that you enjoy the day and hold close to your heart the true meaning of the celebration.

Easy Coconut Custard Pie

4 eggs
2 cups milk
¾ cup sugar
½ cup flour
¼ cup butter
1 tsp. vanilla extract
1 cup coconut l


Put all ingredients into a large mixing bowl. Beat well with a hand held mixer on high speed. Pour into a greased 10-inch pie plate. Bake at 350 degrees for 40 minutes.


Easter Bunny Trail Dessert

Pre-packaged pound cake cut into slices
1 can strawberry pie filling
12 oz. cool whip
1 cup coconut
1 tsp. green food coloring
1 cup jelly beans
4 marshmallow bunnies


Line bottom of baking dish or pan with cake slices. Top with strawberry pie filling and cool whip. Refrigerate 1 hour or until ready to serve. Place coconut in zip-lock bag with green food coloring to tint. Sprinkle onto cool whip. Decorate with jelly beans and bunnies.

Peanut Butter Eggs

1 lb. box powdered sugar
3 oz. pkg. cream cheese
12 oz. jar peanut butter
1 tsp. vanilla
½ stick butter


Mix ingredients well with clean hands. Shape into eggs and place on cookie sheet covered with wax paper. Chill for ½ hour.

Coating:
12 oz. semi-sweet chocolate chips
½ bar of paraffin


Melt paraffin and chocolate in a double boiler or a large pan filled with boiling water and a smaller one inside of it. (Careful not to let water get in chocolate.).Coat eggs with chocolate and chill.

Easter Bunny Salad

4 salad plates
1 head lettuce
8 almonds
Maraschino cherries
Marshmallows
1 can pears


Shred lettuce, make a bed of lettuce on each plate and place ½ a pear, round side up, in the center of each bed of lettuce. Insert two almonds in the narrow end of the pear for the ears. Slice a cherry into four pieces. Insert the cherries to look like the eyes and nose of the bunny. Cut marshmallows to look like tail.
