Mother’s Day Is Just Around The Corner

It’s just over a week away and none too early to start planning how to treat mom like a queen on her big day. Mother’s Day should be a special time to honor the lady of the house and I’m going to help you plan a great day from beginning to end.

Make plans now to surprise her with breakfast in bed amd keep it simple so little hands can help, too. Watch next week’s column for the finishing touches. It’s the simple things in life that make most moms happy – take it from someone who knows.

(Moms, I know that you are probably the ones reading this right now, so grab your scissors, cut this out and place it where your responsible family members will find it easily. Maybe they’ll get the hint!)

Easy French Toast
1 egg
½ cup milk
Dash of cinnamon
1 slice of bread

Beat egg, add milk and cinnamon; dip bread into mixture, coating well and then into hot skillet for just a couple of minutes; turn to lightly brown the other side and remove to a plate. Top with butter, syrup or her favorite jam.

Quick Fruit Bowl (enough for Mom, Dad and the kids)
1 can peach pie filling
3 firm bananas, sliced
2 cups strawberries, halved
1 cup seedless grapes

Combine all ingredients in a bowl. Refrigerate until serving.

Family Scramble
1/3 cup chopped onion
¼ cup chopped green pepper
¼ cup butter or margarine
2 medium potatoes, peeled, cooked and cubed
1 ½ cups chopped ham
6 eggs
2 Tbsp. water
Dash pepper

In a large skillet, cook onion and green pepper in butter until tender-crisp, Add potatoes and ham; cook and stir for 5 minutes. In bowl, beat eggs, water and pepper; pour over ham mixture. Cook over low heat, stirring occasionally until eggs are set. Top with shredded cheese if desired. Makes about 6 servings.

Serve with a bear hug and a sweet smile.

Don’t forget the coffee and juice, and clean up the kitchen before she sees the mess! Most of all, let Mom know that she is loved and appreciated. You’ll be glad you did!

And for a gift she’s sure to love, pick up a copy of my cookbook “Lovin’ Spoonful – Cooking With Family and Friends.” You can find it at all locations of the Boone Drug Store Chains, Black Bear Books, High Country Media Offices – Boone, Banner Elk, West Jefferson, and The Avery Journal in Newland. Also in Boone at Trailway Cleaners and Wilcox Emporium, 3rd floor, booth 312-W. If you can’t find them there, give me a call at (828) 264-6761; or my sister Gail Polson in Avery County at (828)733-0373.
