Have You Sent Us Your Recipes Yet?

We’re beginning to see a few of those family favorite recipes rolling in for our upcoming holiday recipe section, but we need more! We introduced our project in last week’s column and you’ve been seeing our advertisements in all of our papers, so we know you are hearing about it and we want to make sure you don’t get left out of this exciting opportunity and what we hope will be a “new” tradition for all of us. Just in case this is the first Mountain Times Publication that you’ve picked up in a few weeks, we’ll tell you about it.

On Nov. 14, our readers will be able to find, in most of our local newspapers, a special edition of holiday recipes. We need all of you wonderful country cooks (and city folks, too) to write down your favorite recipes or those your grandmother handed down many years ago – and share them with us. Our readers’ favorite recipes will be compiled into a special pull-out section for you to keep, but we need your submissions by Oct. 22 to make it work. Recipes should be categorized into main dishes, side dishes, salads/appetizers/beverages and desserts. Start organizing those time-honored treats and tips today and send them to us as soon as possible. Let us hear from you soon. While we’re waiting, I’ll share a few more of my family’s favorites.

Sugar-Free Holiday Cookies

1 cup raisins
½ cup chopped dates
½ cup chopped apples
1 cup water
½ cup margarine
1 cup plain flour
1 tsp. baking soda
1 tsp. vanilla
1 cup quick cooking oats
2 eggs, beaten
¾ cup chopped nuts

Cook first 4 ingredients for 3 minutes on low heat. Add margarine; cool slightly. Add remaining ingredients, mix well and refrigerate overnight. Drop by spoonful on greased baking sheet and bake at 350 for 10-12 minutes. Delicious for dieters and diabetics! (May also add 1 packet of Sweet ‘N Low, but it’s not really necessary).


Frosted Pumpkin Dessert Squares

1½ cups graham cracker crumbs
¼ cup sugar
¼ cup butter or margarine, melted
1 (16-ounce) can pumpkin or 2 cups fresh pumpkin puree
½ cup brown sugar
½ teaspoon salt
1 teaspoon ground cinnamon
¼ teaspoon ground ginger
1/8 teaspoon ground cloves
1 quart vanilla ice cream, softened
Whipped cream
Toasted coconut

Mix crumbs with sugar and butter. Press into bottom of 9-inch square pan. Combine pumpkin with brown sugar, salt and spices. Fold in ice cream. Pour into crumb-lined pan. Cover and freeze until firm. Remove from freezer about 20 minutes before serving. Cut into squares; top each square with whipped cream and toasted coconut. Makes about 9 (3-inch) squares.


Too Easy Apple Cake

1 package yellow cake mix
1 can Apple pie filling
3 eggs
3 teaspoons sugar
1 teaspoon cinnamon

Heat oven to 350 degrees. Lightly grease a 9x13-inch cake pan. Combine cake mix, apple pie filling and eggs. Beat 2 minutes with mixer at medium speed. Combine sugar and cinnamon. Spread half the batter into the pan, sprinkle with cinnamon sugar, pour over remaining batter and sprinkle with the remaining sugar mixture. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.

(This recipe is great for a last minute dessert. If you want larger chunks of apple, just blend the ingredients with a spoon instead of mixer. I’m thinking that adding chopped nuts with the cinnamon/sugar mixture would be good, too. And of course, whipped cream or ice cream on top would be perfect.)
