Tailgating Treats

This week’s column is dedicated to all you die-hard football fans who’ve been reminding me there’s still some tailgating going on around these hills. I’m sorry that I’ve nearly let you down this fall, but hopefully (and just in time for the “big one” this week), these tips will see you through for some tailgating treats and tricks.

Easy Chili Recipe
(Easy to transport or grill on-site. Just bring your frying pan and soup pot!)

1 lb. ground beef
1 chopped onion
Brown in skillet together and drain. Pour into a large pot.

Add:
1 (8 oz.) can tomato sauce
1 large can tomatoes
1 Tbs. sugar
1 tsp. garlic
1 tsp. oregano
1 ½ tsp. salt
1 ½ tsp. chili powder (or more to suit taste)
2 cans kidney beans with 4 cans of water. Bring to a boil and simmer for 30 minutes.

Grilled Hot Wings
(Recipe makes up to 50 really “hot” wings)

Bag of thawed wings (or fresh drummets) rinse (don’t pat dry) and place in several zip lock bags.
Pour in 1 to 2 bottles of Paul Newman’s Own Olive oil & Vinegar.
Add 1 heaping Tbs. of chopped “Old El Paso” green chilies.
Mix well. Remove as much air as possible and seal. Marinade for 2 hrs. Turn often. For the sauce, melt ½ stick unsalted butter in a glass sauce pan.
Mix together and pour into sauce pan:
½ to ¾ bottle of habanero sauce
1 to 2 Tbs. garlic chili pepper sauce
1 to 2 Tbs. Cajun hot sauce

Just heat enough to melt the butter and simmer the hot sauces. Remove wings from marinade, (discard) and grill on med. heat for 45 minutes. Turn wings every 10 minutes. Remove from grill. Place wings in a large bowl and pour warm sauce over wings tossing with thongs to coat.

Ham and Cheese Roll-ups

1 pkg. of ham (long slices)
1 (8 oz.) pkg. cream cheese, softened
1 Tbs. fresh chives, chopped

Combine cream cheese and chives. Spread mixture on ham slices and roll up. When ready to serve, slice ham roll in four pieces.

Baby Ruth Brownies

1 pkg. brownie mix
3 (2.1-ounce) Baby Ruth candy bars, chopped
1 (8-oz, pkg. cream cheese, brought to room temperature
½ cup sugar
1 large egg
2 tsp. milk

Preheat oven to 350 degrees. Prepare brownie mix as directed on package, then stir in chopped candy. Pour into a greased 9x13” baking pan.
In a small mixing bowl, beat cream cheese and sugar until smooth. Add egg and milk to the cream cheese mixture and blend well. Drizzle cream cheese mixture over brownie batter and swirl with a knife to create a marbled look. Bake for 35-40 minutes, until toothpick inserted in center comes out almost clean. Remove brownies from oven and cool completely in pan, on a wire rack. Cut into bars.

Faye’s Reece’s Candy
(Shared by Faye Brown)

1 box powdered sugar
1 (12-oz.) jar peanut butter, smooth or crunchy
1 stick of butter, softened
Mix together and press into a tray or pan.
1 (6 oz.) pkg. chocolate chips, melted and spread over peanut butter mixture. Cool and cut into squares
